Ham and Cheese Croissants

Ingredients
2 sheets Heritage Bakers flaky puff pastry (thawed)
2 Tbsp dijon mustard
100g sliced ham
8 cheese slices, cut in half lengthways
Cracked pepper, salt flakes
1 egg, dash of water
Method
Place a sheet of pastry onto your workbench.
Cut into 4 even sized strips.
Spread each strip with a little dijon mustard. Leaving about 1 cm border from one edge.
Divide the ham to lightly cover each strip
Place 2 pieces of cheese on each strip.
Brush the border with a little egg wash.
Fold each strip over 3 times to create a neat parcel.
Brush the top with egg wash. Crack over a little pepper and sprinkle salt flakes.
Bake until well risen and golden brown 20-25 minutes.
