Goats Cheese and Cranberry Festive Bites

Ingredients

  • 1 sheet Heritage Bakers Savoury Shortcrust Pastry, thawed

  • 60 g goat’s cheese or feta, crumbled

  • 2–3 Tbsp cranberry jelly or cranberry sauce

  • 1 tsp finely chopped fresh rosemary

  • Cracked black pepper

  • 1 egg, lightly beaten (for glaze)

Method

  1. Preheat the oven to 190 °C (170 °C fan). Line a baking tray with baking paper.

  2. Using a 6 cm round cutter, cut circles from the pastry and place on the tray.

  3. Prick each piece lightly with a fork and chill for 10 minutes to prevent puffing.

  4. Brush with beaten egg. Top each with a little goat’s cheese, a small spoonful of cranberry jelly, and a pinch of chopped rosemary. Season with cracked black pepper.

  5. Bake: 12–15 minutes, or until golden and crisp.

  6. Serve: Enjoy warm or at room temperature — ideal with a glass of bubbles to start the festive celebrations.

Make Ahead & Freeze

  • Make ahead: Assemble and chill up to 4 hours before baking.

  • To freeze unbaked: Freeze flat on a tray, then store in a container. Bake from frozen at 180 °C for 15–17 minutes until golden.
