Cute Little Jam Tarts

Makes: 12 tarts

Ingredients

  • 2 sheet Heritage Bakers ready-rolled sweet shortcrust pastry

  • About 12 tsp jam (any flavour you like)

Method

  1. Preheat the oven to 190°C (fan 170°C) and lightly grease a medium muffin tin.

  2. Using a 6 cm round cutter (or one to fit your tins), cut rounds of pastry and gently press into the muffin tin.

  3. Spoon 1 tsp jam into each pastry case.

  4. Re-roll any offcuts and cut small shapes — stars, hearts or festive motifs — to sit on top of the jam.

  5. Bake for 15–18 minutes, until the pastry is golden and the jam is gently bubbling.

  6. Cool slightly before removing from the tin.

Tip: These can be frozen unbaked — place the filled tarts on a tray to freeze, then transfer to a container. Bake straight from frozen, adding a few extra minutes to the cooking time.
